Zucchini / Courgette fritters
Grandma's recipe : tasy, easy to prepare and crispy.
Ingredients :
- 3-4 green zucchini/courgette (peeled off and grated)
- 2 eggs
- 150 gr flour
- 200 gr feta (grated)
- 2-3 garlic cloves (minced)
- fresh dille and/or parsley (tiny cut)
Time :
- Prepare : 25 minutes
- Cook : 15 minutes
Method :
- Peel off the skin of the zucchini.
- Shred the zucchini on a box grater or food processor. Add salt to it and let them sit for about 10 mins.
- Use a clean dish towel or your hands to squeeze as much as possible water from the zucchini.
- In a large bowl wish the eggs. Combine with the rest of the ingredients : zucchini,feta, garlic, parsley ,dille and flour. Season with salt and pepper, to taste.
- Heat olive oil in a skillet over medium high heat and scoop 1 tablespoon of batter for each fritter in the pan, flattening it with a spatula. Pan-fry until golden brown - for about 2 minutes on each side.
- Drain the zucchini fritters on paper towels and enjoy them simple or with a fresh yoghurt sauce.
Idea for sauce : Shred a half cucumber and squeeze its water. Combine it with 125 grams yoghurt, juice from half lime and some fresh mint leaves. Optionally, you may add some minced garlic as well if you like.
