White Asparagus with Salmon, Ham, Eggs, New Potatoes and Hollandaise Sauce
During period April - June our favorite ingredient is : white asparagus. The mild and delicate flavor together with all the nutritious benefits make the white asparagus a great choice for your meal. Asparagus is rich in antioxidants and a good source of B vitamins and copper. Below I will present you a delicious dutch recipe on how to prepare and enjoy your white asparagus. Ideally it is paired with some good white wine - recommended to choose from GrĂ¼ner Veltliner, dry Riesling or Sauvignon Blanc.
Ingredients (for 2 persons) :
- 1 kg peeled white asparagus (I buy them already peeled)
- 200 gr new potatoes
- 250 gr salmon
- 4-6 slices of ham
- 2-4 eggs
- 1 bouillon tablet (vegetables or chicken flavour)
- 1 green onion
- hollandaise sauce (i used the one from Knorr)
Time :
- Prepare : 10 minutes
- Cook : 25 minutes
Method:
- Season the salmon with salt, pepper. Drizzle a bit of lemon juice and olive oil and add it in the preheated oven to 200 degrees for 20 minutes.
- Wash and cook the potatoes in salted water for 15-20 minutes or until they are nicely tender. Set aside, season with salt & pepper and cover so that they remain warm.
- Boil the eggs until they are well done - for approx. 10 minutes. Peel and set aside.
- Cook the asparagus in 1 liter of water with the cube of bouillon for 8 to 10 minutes or until a knife inserted in one stalk comes out smoothly. Set aside.
- Prepare the Hollandaise Sauce as per the instructions from the pack.
- Once all the ingredients are cooked you may either serve them on the table and everyone can choose what they like or prepare a platter like in the picture below. Drizzle generously warm hollandaise sauce over your asparagus and potatoes.
