Super Green Spaghetti by Jamie Oliver

Ingredients :
150 gr spaghetti
4 cloves of garlic , peeled
200 gr cavalo nero , only the leaves - the stems to be teared out
30 gr parmesan cheese , grated
30 gr ricotta cheese
Time :
- Prepare : 3 minutes
- Cook : 10 minutes
Method :
- Cook the pasta in a pan of boiling salted water according to the packaging instructions.
- Add the cavalo nero leaves and the garlic in the water where the pasta is boiling for 5 minutes
- In a blender, blitz until super smooth 1 1/2 tablespoon of extra virgin olive oil, the boiled leaves & garlic
- Season with salt and pepper, as per your liking
- Drain the pasta, reserving a small cup of cooking water
- Add the drained pasta and the smooth green sauce in the pan and stir them togehter. If needed, add a bit of boiled water.
- Add the spaghetti to the plate and top it with ricotta and a tiny bit of extra virgin olive oil
