Quiche with Butternut Squash
There are so many variants of a quiche! My favorite one is the Butternut Squash Quiche, but will be sharing with you also other examples soon - all very tasty! Until then, I hope you will try and enjoy this one!
Ingredients :
- 1 pastry dough
- 200 ml creme fraiche
- 100 gr goat cheese
- 3 eggs
- 2 onions (cut into thin circles)
- 200 gr of butternut squash (without skin and sliced into max 1 cm thick half-moons)
- pinch of nutmeg
- 1 tsp of cardamon
- 1 tsp of grounded caraway seeds
- olive oil
Time :
- Prepare : 35 minutes
- Bake : 40 minutes
Method :
Preheat the oven to 200°C fan. Mix the squash with 2 tbsp olive oil, the cardamom and caraway seeds. Spread out on the baking sheets. Sometimes I prepare these the night before. I usually slice a full butternut squash and bake it and either I prepare more quiches or I use the rest for a separate dish.
Roast the squash for 25 minutes or until golden brown, and remove from the oven. Keep 5-6 half-moons to decorate the quiche and the rest cut in small pieces.
Meanwhile heat a small frying pan and cook the onions for few minutes, until translucent.
Beat the eggs very well and then mix them together with the creme fraiche. Add a pinch of nutmeg and salt to taste. Incorporate the cut butternut into the filling.
Grease the quiche baking pan with baking spray and add at the bottom a parchment paper. Add the puff pastry and model it nicely on the dish.
Lightly prick the base with a fork, then add the onions and spread over the pastry.
Pour the filling into the pastry case, top it with the butternut half-moons and the goat cheese and add it in the preheated oven to 180 degrees C for 35-40 minutes.
Let the quiche settle for at least 5 mins, then remove it from the tin. It is very tasty both freshly baked and cold.
