Green Veggies Tart with Ricotta
Your new favorite summer tart : green, fresh, tasty and beautiful!
Ingredients :
puff pastry for tarts (I used a bought one for flammkuchen here)
1 egg
250 gr ricotta cheese
green veggies you like (4-5 pieces of asparagus, half courgette, 4 broccolini, 4 tablespoons of peas)
fresh thyme, dille and spring onion
Zest of 1/2 lemon
Method:
- Preheat the oven the 200C (fan).
- Transfer the pastry to a baking tray lined with parchment paper and using a table fork make small holes.
- In a pot with boiling water and a pinch of salt, boil for 4 minutes the asparagus, peas, beans and broccolini.
- In a bowl mix together the egg, ricotta, tiny sliced thyme leaves, dille and green spring onion and set aside.
- Spread the ricotta filling evenly over the pastry and top it with the green boiled veggies - let your creativity fly :) Add few “roses/rolls” from the slices of raw courgette and add the tray in the preheated oven for 15 minutes.
- Once baked, let the tart rest for few minutes before serving.
- Grate some lemon zest, then slice it and enjoy :) I like it at room temperature.
