Cheesy White Asparagus Tart
This tart is absolutely delicious! A must try during the white asparagus season.
Ingredients :
- 1 egg
- 1 puff pastry
- 100 gr ricotta
- 25 gr grated mozzarella
- 100 gr smoked salmon
- 200 gr thin peeled white asparagus
- green onion
- sesame seeds
- zest from 1 lemon
Time :
- Prepare : 5 minutes
- Cook : 30 minutes
Method :
Boil the peeled asparagus for 3-5 minutes to soften just a bit
Score the edges of the dough to create a frame
Brush the “frame” with egg wash (egg & water) and sprinkle some sesame seeds
Mix the remaining of the egg with the cheese (mozarella and ricotta) and half of the lemon zest
Spread the cheese mixture over the dough , up to the frame
Top it with thin slices of green onion, smoked salmon, white asparagus and add it in the preheated oven at 200 degrees for 20-25 minutes (until brown)
Cut into slices and enjoy. Is super tasty both warm and cold. You may top if with some extra fresh ricotta with lemon zest.
