Peanut Butter Banana Bread
The perfect recipe if you have some " old" & ripen bananas in the house and not only in this case! This healthy gluten-free banana bread is the perfect recipe for every day : simple, easy to prepare, nourishing and extremly delicious! Ours was finished in less than 1 hour :)
Ingredients :
4 ripe bananas
3 eggs
80 gr peanut butter
1 tbsp coconut oil
2 tbsp vanilla essence
100 gr almond flour (self rising*)
* if you do not find self rising flour then add 1/2 tsp of baking powder
Time :
- Prepare : 10 minutes
- Bake : 45 minutes
Method :
Preheat oven to 160 degrees Celsius.
Blend 3 bananas in a blender or mash them well with a fork until they turn into a smooth liquid.
Add the rest of the wet ingredients to the bowl and stir well until fully combined. I added them all in the blender, gradually: first bananas, then the peanut butter, coconut oil and at the end the eggs.
Incorporate the wet mixture in the flour and stir well.
Grease the pan with coconut oil or baking spray (I like to use the one from Dr Oetker) to help the baking paper stay in place. I used a pan of 30 x 11 cm.
Pour the batter in the pan. Slice the last banana lengthwise in 2 similar pieces and add them on top of the batter as in the picture.
Bake in the oven for 45 minutes or until the top is golden brown. Do the toothpick test.
When ready, remove from the oven and let it cool for few minutes before removing from the pan.
