Knedle with plums
Knedle or plums dumplins is an autumnal dessert that for sure will become your favorite! In Romania is cooked mostly in Transylvania and it has his roots in the german dessert Knödel. My grandma from Cluj used to cook it for me often. She loved it because it was a traditional dessert in her family, who was a sachs family so they would often cook german cuisine.
Ingredients :
- 800 gr potatoes
- a handful of ripe small-medium sized pitted plumbs (e.g. used 12)
- 200 gr flour
- 200 gr bread crumbles
- 2 eggs
- 50 gr butter
- 2 tsp cinnamon
- 3 tbsp sugar (brown) - aprox, based on your taste
- 1 pinch of salt
Method :
Wash and boil the unpeeled potatoes .
Mix the pitted plums with sugar and cinnamon and leave them aside .
Strain the water from the cooked potatoes and let them cool down.
Once at the room temperature, peel the potatoes and mash them (as for making a puree). Add the eggs and continue mixing. Then add the flour, spoon by spoon until you have a sticky paste. Make sure you do not add too much flour as then the dumplings will be too rough.
In a pan, melt the butter, add the breadcrumbs and stir until golden. Add sugar (I added 2 tbsp) and continue stirring for 2 more minutes and let aside.
Make from the dough little balls, add the plum in the middle of it, cover well evenly and let it aside.
Meanwhile prepare 3-4 litres of boiling water with a pinch of salt. Here you will add one by one the dumplins for about 5-7 minutes (they are ready once they rise to the surface).
Gently remove the dumplings from the water and roll them in the breadcrumbs until they are fully covered in the tasty golden breadcrumbs.
