Brownie with Sour Cherry
A love story at the first tasting!
Ingredients :
- 3 large eggs
- 150 gr brown sugar
- 150 ml of sunflower oil
- 100 gr dark chocolate for cooking
- 30 gr cocoa
- 250 gr flour
- 1 lg essence of rum
- 10 gr baking powder
- a pinch of salt
- 250 gr cherries (fresh, from compote, kept in aspirin, etc.)
Time:
- Preparation: 15 minutes
- Cooking: 20 minutes
Method:
Heat the oven to 160 degrees C with fan.
For baking I used a medium tray (26x27x5cm). Grease your baking tray well with butter (I prefer cooking spray - e.g. Dr Oetker) and add also baking paper.
Melt the chocolate using the baine marie method.
In a bowl mix at high speed for 5 minutes the egss, sugar, oil and rum essence, until you get a foam.
Add the melted chocolate and continue to mix very well for 2 more minutes.
Continue to gradually add flour, cocoa powder, baking powder and a pinch of salt and mix until you get a thick dough.
Put the dough in the form and level with a spatula to be uniform. Add the cherries and bake for 20 minutes or until the top of the cake is passing the toothpick test (in the middle it should remain soft).
