Best Carrot Cake Recipe
Presenting you the recipe of a dense, but delicate carrot cake.
Ingredients :
Cake :
The ingredients mentioned below will allow you prepare a 3 layer cake.
In the below pictures you may see that I have 2 cakes. Since I didn’t have 3 pans with the same dimension, I decided to prepare 2 cakes (a big and a small one).
- 450 gr grated & peeled carrots
- 4 large eggs
- 300 gr flour
- 200 gr white sugar
- 200 gr brown sugar
- 300 ml vegetable oil
- 3 tsp baking soda
- 1 tsp sea salt
- 2 tsp cinnamon
- 2 tsp vanilla extract
- fresh grated nutmeg
Creamy Frosting :
- 400 gr Philadelphia Cheese at room temperature
- 125 gr unsalted butter at room temperature
- 150 gr powdered sugar (for a sweeter frosting you can use 200 gr)
Topping :
- 100 gr chopped peacans
- your choice - see few examples : marzipan carrots, natural flowers, grated carrots or rosemary
Time :
- Prepare : 30 minutes
- Bake : 35 minutes
- Frost & Decorate : 10 minutes
Method :
- Preheat oven to 170 degrees Celsius.
- Add on the bottom of the round cake pans the parchment paper, then grease and flour the bottem on the sides of the pans. The pans that I used had this dimension of 26 cm.
- Mix the flour, baking soda, salt, nutmeg and the cinnamon until well blended.
- In a separate bowl, whisk the eggs and then gradually add the oil, sugars and vanilla and whisk until well combined.
- Add the dry mixture gently by stirring until you have a smooth composition. Stir in the carrots and optionally add some nuts and raisins. I used some vanilla rum soaked raisins that I always prepare upfront and like to use in most of my cookies.
- Divide the batter between the prepared cake pans.
- Bake for approx. 35 minutes (test once ready by inserting a toothpick into the center of the cake and see if it comes out clean).
- Meanwhile prepare the icing by mixing together with a mixer on medium speed the cream cheese, powdered sugar and the butter until you have a smooth composition. Chill in the fridge until ready to frost the cake.
- Once the cakes are nicely baked, let them cool off in the pans for approx. 15 minutes.
- When the cake layers are completely cool, cut very thin the top of one cake layer (or of 2 if you prepare 3 layers) to ensure that your cake will be stable and that the frosting will nicely mix with the cake.
- Start frosting first layer, place the other cake layer on top and so on. Decorate the cake as per your wish. See below some ideas.

I recommend preparing this cake the night before so that the cream can nicely get incorporated in the cake and let all the flavors create an uniform texture.
