Apricot Vanilla Custard Tart
My favorite summer tart! Easy, tasty and fresh!
Ingredients :
1 pastry dough
4 egg yolks
20 gr powdered sugar
20 gr flour
250 ml milk
1 tsp vanilla paste
400 gr ripe apricots , halved and with the pit removed
half cup water
half cup crystal sugar
Optional :
1 handful blueberries
fresh mint
few almond flakes
Method:
Mix 3 egg yolks with the powdered sugar and the flour to form a paste.
Boil the milk in a pan with the vanilla paste. When boiling, add the paste from the step 01 and mix thoroughly until you form a thick custard. Set aside.
Prepare the dough and prick it with the fork.
Pour the vanilla cream and top it with the apricots.
Whisk the remaining yolk and add a spoon of milk. This will be used to brush the dough crust. Optionally, top it with some almond flakes.
Add the cake in the oven preheated at 200 degrees for 25 minutes.
Meanwhile prepare the sugar toping : in a small pan add the water and leave it to boil. Once boiling, add slowly the sugar and mix well.
When the cake is out of the oven, top it with some fresh blueberries and then brush the sugar topping on top of the fruit.
Leave it to cool down and then can be eaten or stored in the fridge.
