White Asparagus Soup
A delicious and delicate soup based on the recipe of my mother in law. One of my favorite dutch recipes & a definetly must try!
Ingredients :
- 500 gr white asparagus without peel (these can be used either in the soup or eaten separately. usually we prepare this soup after we have asparagus for dinner. the most important for the soup is the water in which you boiled the asparagus + to add few pieces of it)
- 400 ml milk
- 600 ml water (in which you boiled the asparagus)
- 32 gr butter
- 15 gr flour
- 2 bouillon tablets (vegetables or chicken flavour)
- nutmeg
Time :
- Cook : 25 minutes
Method:
- Cook the asparagus in 1 liter of water for 8 to 10 minutes or until a knife inserted in one stalk comes out smoothly. Set aside.
- Melt the butter in the pan where you will cook your soup.
- Add the flour and stir until you get a ball or a smooth composition.
- Mix the milk with 600 ml of the water where you cooked the asparagus.
- Start adding it bit by bit in the pan, next to the butter and flour. Continue stirring until there are no flour lumps.
- Add the bouillon tablets and continue boiling for 6-8 minutes.
- Add the cooked & cut asparagus and a pinch of nutmeg.
