Stuffed Avocado with Shrimps, Mango and Tomatoes
Light and healthy!
Ingredients :
General :
- 2 avocados
- 100 gr cooked shrimps
- 100 gr ripe mango
- 2-3 small tomatoes
Dressing :
- 1 tsp chopped fresh coriander
- t tsp wine vinegar
- 1 tsp olive oil
- 1 tsp honey
- 1 tsp lime juice
- 1 tsp cumin
- some chilli flakes
Time :
- Prepare : 20 minutes
Method :
- Cut each avocado in half lengthways, remove the pits and scoop out the flesh without breaking the skin. Then set aside.
- Cut the avocado, mango and tomatoes in small cubes and mix them easily together with the shrimps.
- Prepare the dressing by mixing all the above mentioned ingredients together.
- Add the dressing on top of the shrimps and the rest of the ingredients and let them marinate in the fridge for minimum 10 minutes.
- Add the shrimp mixture in each skin of avocado (prepared at step 1), garnish with some chilli flakes or coriander and serve.
