Beetroot Soup (Romanian recipe)
This is a traditional soup recipe from my area, Bucovina! Hope you will enjoy it! It is very fulfilling so can be enjoyed during both lunch or dinner.
Ingredients (for a soup of approx 2 Litres) :
500 gr beetroot, peeled & grated (I used preboiled version)
500 ml tomato juice (I used Tomato Frito from Heinz)
2 medium potatoes, peeled & cut into small cubes
2 medium carrots, peeles & sliced into small slices
1 large onion, chopped
1/4 celery root, peeles & cut into small cubes
1 tbsp of chopped parsley
3 bay leaves
1/2 tsp of peppercorns
- Optional for topping : sour cream
Time :
- Prepare : 10 minutes
- Cook : 45 minutes
Method :
- Cook the onions in the pan where you will prepare the soup until translucent.
- Add the carrots and celery and let them cook together with the onion for about 5 minutes.
- Add 500 ml of water, the bay leaves, salt to taste, the peppercorns and the potatoes over the rest of the vegetables and continue cooking for 20 minutes. If your beetroot is not preboiled, then add it in the pan now.
- Add 1 litre of water and the tomato juice, stir everything together and continue cooking for about 15 minutes or until your veggies are cooked. If your beetroot is preboiled, then add it to the pan now.
- Sprinkle over your soup some chopped parsley and if you like add some sourcream.
